Baking with Seasonal Fruits: Blueberries

Perhaps the most versatile of yummy summer berries, blueberries are high in nutrients and antioxidants, are considered a "superfood," and are delightful in a wide range of dishes from sweet baked goods to savory sandwiches. Blueberries are also believed to be great for memory, vision, and are a tasty source of fiber. Because of their rich, almost purple hue, blueberries have been used as a natural food dye and were possibly even used by early colonists to make paint! All fun facts aside, when summertime rolls around, we absolutely can't wait to get baking with these fun, colorful little berries! 

Along with some amazingly delicious recipes, we found this helpful list from the U.S. Highbush Blueberry Council to make sure all your blueberry treats are sweetly successful! Because blueberries are so deliciously juicy, this also means they are heavy. The Blueberry Council suggests trying dried blueberries during baking because they remain suspended in the batter. Because blueberries are brightly colored, they suggest gently folding berries into batter to prevent streaking. Additionally, this list provides some helpful information about blueberries and pH level, and how berry color can change when exposed to various baking chemicals.
